The aim of this assignment is to develop an awareness of what strategies can be used to prevent food poisoning from occurring. Therefore as you prepare for this assignment you must remember the focus and not only  list the number of food poisoning bacteria and their characteristics.

The strategies to prevent food poisoning which you are required to research and review are the following:
1. Raw material contamination and handling;
2. Food preparation prior to any processing;
3. Heating or cooking of foods, including reheating of foods;
4. Cooling of food and cold temperature storage;
5. The role of the food handler.

In addressing each of these strategies (given above), first give some general background and then illustrate with specific examples based on only Gram negative food poisoning bacteria. (There is no need to describe the food poisoning bacteria). To emphasize some of the strategies, brief descriptions of food poisoning outbreaks related to Australian context should be used to indicate what happens when the preventative measures are not achieved. It will be necessary to cover 5 different food poisoning bacteria in this assignment, but when discussing each strategy you must use at least two bacteria for illustrations.

Background reading for this assignment should be Chapters 8-11 inclusive from Hobb’s Food Poisoning & Food Hygiene 7th edition. Since this is a UK publication you should then look for  Australian sources to bring the content into relevance. Use the Green Book and the relevant sections from class lecture and notes for information on outbreaks however your search should not be only limited to these sources.

In-text referencing (Harvard format) for this assignment is necessary to identify sources from which examples are drawn. A complete reference list at the end should be listed. Note: that proper in-text and bibliography referencing should be used. Check library if not sure. Internet information should be properly referenced.
